One of Jamies easy 15 minute meals. Beautiful recipe that can be adapted easily to suit your dietary needs or what you have available in your pantry.
One can of tuna (250g) flavour to your preference
One lemon (zest and juice)
300g of broccoli tender stems or broccoli sliced
1 can of lentils drained
30g of fresh flat leaf parsley chopped
olive oil dressing
Blitz in a blender tuna with its juice, lemon juice with a dash of olive oil and salt and water until smooth, add more water if needed.
Trim broccoli and blanch in a large pan of boiling salted water for 3 minutes until tender.
Finley slice the chillies.
Drain the broccoli and return to the pain and toss with lemon zest, most of the chilli one tablespoon of olive oil and salt. Add the lentils and toss for 2 minutes then divide between plates, drizzle over tuna dressing and scatter the reserved chilli.
Garnish with parsley and drizzle extra olive oil over the dish to finish.
