Tomtits Fennel Beet & Feta Salad


2 fennel bulbs

1/2 block of feta

2 raw beetroot

Salad leaves

1 orange/other citrus or apple

1/2 cup of roasted almonds

Fresh mint


1/4 cup olive oil

1 Tsp honey

1 juiced citrus

1 Tsp roasted cumin seeds

salt and pepper


Thinly slice fennel, beetroot, and fruit. Crumble feta and toss all other ingredients in a large salad bowl.

Add all dressing ingredients in a small jar and shake well.

Add dressing to salad before serving and garnish with mint leaves.
